Banana Cinnamon Chia Pudding

Ingredients
  • 1 1/2 cups coconut milk
  • 2 ripe bananas
  • 1 heaped tsp nut butter - I used cashew
  • 1 tsp cinnamon
  • 1 tbsp vanilla extract
  • 1/4 cup chia seeds

These little cups make a great, nutritious breakfast or snack that will fill you up and give you energy to take on the day.

Refrigerate in ramekins for grown ups or in little salad dressing containers for kids lunch boxes

GLUTEN, EGG, SUGAR & DAIRY FREE

Blend the coconut milk, bananas, nut butter, cinnamon and vanilla extract until smooth
Add chia seeds and mix well
Spoon into individual ramekins and chill

Makes 4 large serves or 8 small serves
