In the misinformed past we were advised that egg yolks caused heart disease and egg white omelettes were all the rage. Thank goodness those days are over, and our hearts are all the better for it! The egg white as it happens holds very little nutritional value in comparison to the powerhouse that is the yolk. They do contain cholesterol, although as we now know cholesterol rich foods do not cause heart disease or stroke. Every cell in our body requires cholesterol to function correctly and cholesterol rich foods like egg yolks contain many fat soluble vitamins and essential fatty acids.
In just approximately 77 calories egg yolks contain Vitamins A, B12, B5, E, D and K, phosphorous, iron, selenium and choline to name a few. Added to that they have the long chain omega-3 fatty acid DHA, which is necessary for brain and eye function and the long chain omega-6 fatty acid arachidonic acid, required for healthy hair and skin as well as growth, reproduction and healing.
Pasture raised eggs from chickens allowed to forage freely for insects and grass have a much higher nutritional value than eggs from caged hens. In our house we call those poor hens "Prison Chickens". Please don't buy eggs from Prison Chickens or support those who incarcerate them. Yes, I know pasture raised chicken eggs are more expensive but buying their eggs is better for you and better for chickens.

Just for fun though, if you decide to make an egg yolk omelette or are baking and need to separate your yolks from your whites here's a really nifty way to do it!
